I looked out of our back window today as we are largely isolated at home, and am so very grateful for the skills of my husband Col, and for the wonderful veggies he is producing, especially at this time that is so different for us all – thank you.
We are incredibly lucky to have the space and have enjoyed zucchini, pumpkin, Lebanese eggplant (makes a great relish), basil and other herbs galore, cherry tomatoes, silver beet, lettuces, potatoes……….., all interestingly assisted by the significant heat and rain that preceded COVID19.
Eating in season means checking the internet for variety and I highly recommend Col’s eggplant moussaka! We are able to both store and share the excess with others, which is great. It really makes us come back to the joys of nature and, despite the crippling challenges that exist, I would like to think our communities can embrace a simpler, kinder, more connected way of life overall as we emerge together.
